How Pet Food Is Formulated: What Companion Animal Nutritionists Actually Do

Every bag of kibble and can of wet food starts months before it reaches a shelf. Here’s an honest, inside look at how dog and cat food is really developed.

Every bag of kibble, can of wet food, pouch of freeze-dried meal, tub of raw diet, or container of fresh cooked food on a pet store shelf started somewhere far removed from that shelf. Long before packaging or marketing, there were months, sometimes years, of scientific planning, ingredient testing, nutrient calculations, and regulatory review.

Most pet owners never see any of that. They see a bag with a happy dog on the front and an ingredient list on the back. What they don’t see is the team behind it: nutritionists, food scientists, quality assurance staff, veterinarians, regulatory specialists, and manufacturing engineers, all working through a process most people have never heard of, called pet food formulation.

I’m a Companion Animal Nutritionist. My work sits at the intersection of animal nutrition science and commercial food production, helping pet food companies design and refine the recipes that eventually become the products on those shelves. This is meant to pull back the curtain a little, whether you’re a pet owner, a future nutritionist, or a small pet food brand wondering what a nutrition consultant actually does.

What Is Pet Food Formulation?

Formulation is the process of designing a recipe that checks every one of these boxes at once, not just one or two of them:

Nutritionally complete Safe Digestible Palatable Manufacturable at scale Regulatory compliant Cost appropriate Life-stage specific

It is much more than mixing ingredients together. Every ingredient in a formula earns its place, whether that’s protein quality, a specific fatty acid, moisture, texture, or shelf stability. Change one ingredient and the whole nutritional profile shifts.

The Science Behind Formulating Pet Food

A nutritionist has to account for protein and amino acid quality, fat and essential fatty acids, carbohydrates, a full vitamin and mineral panel, fibre, moisture, energy density, digestibility, and bioavailability, all at the same time. Nutrient interactions matter just as much as individual targets: excess calcium can interfere with zinc and copper absorption, and too much phosphorus relative to calcium can affect bone development in growing animals. This is why an adjustment to one nutrient rarely happens in isolation.

Following AAFCO Nutrient Profiles

Most commercial pet food in North America is formulated against AAFCO nutrient profiles, cross-checked with NRC research data. AAFCO breaks life stages into four categories:

Growth & Reproduction
Puppies, kittens & pregnant/lactating animals
Higher protein, fat, calcium and phosphorus requirements to support development.
Adult Maintenance
Healthy adult dogs & cats
Formulated for animals not in a growth or reproductive stage.
All Life Stages
One recipe, every stage
Meets the higher growth requirements so it’s legally suitable for all ages.
Large Breed Puppy
Controlled growth needs
Specific calcium and calorie limits to reduce developmental orthopedic disease risk.

Formulating Different Types of Pet Food

The manufacturing method shapes what’s nutritionally and functionally possible. Tap a format below to see how it changes the formulation approach.

Dry kibble goes through extrusion, high heat and pressure that cooks the starch and shapes the food. Formulas need to account for nutrient losses during processing and ingredients that hold up structurally through expansion. See how this looks in practice in how kibble is actually made.

Wet food typically goes through retort processing, a form of canning under heat and pressure, which affects texture, nutrient stability, and shelf life differently than extrusion. Moisture calculations shift substantially since wet food often sits at 70 to 80 percent moisture compared to 8 to 10 percent for kibble.

Fresh cooked food uses gentler cooking, preserving more nutrients but requiring tight control over moisture and safety since there’s no long ambient shelf margin. Freeze-dried food removes moisture through sublimation rather than heat, preserving nutrients well but requiring formulation around rehydration and texture. Common Misconceptions About Pet Food Formulation

“Premium ingredients automatically make better food”
A well-formulated recipe using solid, consistent ingredients will outperform a poorly balanced recipe using expensive ones every time.
“Grain-free is always healthier”
Grains aren’t inherently problematic for most dogs and cats. Grain-free formulas simply substitute other carbohydrate sources. Read more in the grain-free and heart health debate.
“Homemade diets are automatically superior”

“More protein is always better”
Excess protein isn’t necessarily harmful in healthy animals, but it isn’t automatically beneficial either, and in some health conditions it needs to be actively managed downward.
“Reading the ingredient list tells you everything”
Ingredient lists say nothing about nutrient bioavailability, amino acid completeness, or how ingredients interact. Two very different formulas can look deceptively similar on paper.
“Two foods with similar ingredients have the same nutritional value”
Sourcing, ingredient form, processing method, and inclusion rates all affect the final nutrient profile, even when the ingredient list looks nearly identical.
